This spirit is made from grape pomace using a traditional Georgian method originating in Kakheti. According to the classic process, grape pomace is stored together with wine in a clay vessel (kvevri) during the winter. In spring, it is removed from the kvevri and distilled—historically in stone vessels, now in copper stills. Tarragon adds a greenish tint and a pleasant aroma to the chacha. It is recommended to serve chilled alongside Georgian vegetables dressed with Kakhetian oil.
