The drink is made from grape must, using a traditional Georgian method that originated in Kakheti. According to the classic method, grape must is stored in a kvevri with wine during the winter, and in the spring it is removed from the kvevri and distilled, earlier in stone vessels, and now in copper vessels. After distillation, the must is infused on freshly picked tarragon leaves for six months, which gives it a greenish color and a delicate menthol aroma.
