This spirit is made from grape pomace using a traditional Georgian method that originates in Kakheti. According to the classic process, grape pomace is stored together with wine in a clay vessel (kvevri) throughout the winter. In spring, it is removed from the kvevri and distilled. Historically, this was done in stone vessels, but today copper stills are used. The addition of honey imparts a distinctive, delicate aroma and unique flavor characteristics to the chacha. It is recommended to be served chilled alongside seasonal fruits and aged cheeses.
